Ruote are wheels of pasta. A complex, arguably uninspired shape that was only possible with the advancement of the pasta industry’s mechanisation, it was itself inspired by mechanics. A number of pasta shapes have taken their form from the industries which shaped Italy in the early twentieth century, and were much lauded by the Fascists.

In that particular field of painting known as graphic, the point develops its autonomous powers with special clarity: the material tools offer to these power many different possibilities in the way of diversity of form and size, which establishes the point in countless entities with different sound values.
RUOTE WITH MUCHROOM RAGOUT

Salt, pepper
⅔ lb mixed beef and pork
½ lb ruote
⅓ lb mushroom
1 clove garlic
1 cup tomato sauce
1 tbs tomato paste
2 tbs olive oil
1 cup vegetable broth
RECIPE
Heat the oil in a large saucepan and saute the crushed garlic with the sprig of rosemary.
Combined the meat that browned carefully, peeling it with a ladle. Removed the rosemary. Combine mushrooms, tomato puree and the broth, lowered the heat and left to simmer for 35 minutes.
Arrived close to the cooking time of my mushroom ragout, boil the ruote, then dipped in the sauce, raising the heat to flavor well and revive the flavors.
Adjusted salt and pepper and served ruote with mushroom ragu with a drizzle of raw oil and some rosemary needles.
